The Truth About Below Deck's Francesca Rubi
Below Deck has a new chief stew. Francesca Rubi is the show's first new chief stew in six seasons, and is replacing departed chief stew Kate Chastain in season 8.
Chastain announced her departure from the Bravo show back in February. "After many months of reflection and internal discussions, I have chosen to make a transition this year in starting to carve out a progressive new land based role," she wrote on Instagram. "I intend to step back as a senior member of the Below Deck Family and work to become financially independent, while continuing to fully support His Majesty Andy Cohen."
While fans were sorry to see Chastain go, Rubi seems like she'll make an excellent addition to the cast of Below Deck. Bravo's The Daily Dish noted that the Sydney, Australia native previously worked in event management before getting into yachting, first as a hostess and then as a purser, deckhand, and stew.

Rubi might be a newcomer to Below Deck, but, judging by a press release for the upcoming season, she's not someone to be trifled with. "When [Francesca] discovers her Stews are not up to her 'white gloves, no watermarks' standards, she reaches a breaking point that sends waves throughout the interior," reads the press release (via Bravo's The Daily Dish). The press release also describes her as "a perfectionist who runs a tight ship by raising the bar when it comes to service."
Rubi herself admits in the season 8 trailer that she can be pretty tough, saying (via ET), "No watermarks, anywhere. All the time. I do take my job a little bit too seriously sometimes."
Being a chief stew is no easy task, but it looks like Rubi is up for the job. Strong personalities often lead to some clashes on Below Deck, so be prepared for some drama as she joins the cast.

While Rubi has yet to make her official Below Deck debut, it's only a matter of time before the new chief stew becomes a star in her own right. Right now, she only has a couple thousand followers on Instagram, but her popularity on social media is bound to explode soon. She also has her own YouTube channel, although it only has a few videos and her last upload was over a year ago. Still, from what we can see, Rubi is a natural on camera and is sure to be a fan favorite.
According to her official Bravo bio, Rubi "grew up determined to live an adventurous lifestyle," which means she definitely made the right career choice. Outside of work, Rubi "loves to find inspiration from cultures around the world, let loose, and party with her crew."
Season 8 of Below Deck starts airing on Monday, November 2.
